ABOUT US
At Ruby's Bistro & Bakery, our passion is to create good hearty  meals that are prepared simply from fresh ingredients and served in a cozy relaxing atmosphere. Ruby's is a Bistro in the traditional sense; it's a great place to gather and linger with friends and neighbors over a good meal and a beer or a glass of wine at an affordable price.

 

Ruby's is a small "mom and pop" restaurant, run by myself, Deborah Laiacona, and my husband, Art Laiacona. Art was raised in Troy and Glens Falls, New York. The life of his father's Sicilian family revolved around good food, from his grandparents' huge vegetable garden and vineyard to his father's work in Menands market. Arthur grew up working in his family’s flower shop, and he moved from there into raising and marketing vegetables as well as beekeeping and honey production.  He has a green thumb and knows good food! My own path has taken me from California to France, Ireland, South Korea, and back again to the US, where I have made Vermont my home. I spent several years working in the restaurant industry helping to manage a restaurant and bar on Catalina Island and working in cafe kitchens in Ireland. In 2019, I started Rosewood Cafe & Store in Fair Haven, but when the covid pandemic struck, Art and I made the sad decision to close Rosewood's doors permanently. We spent two years cooking and baking for the Vermont Farmers Market in Rutland, got back on our feet, and dreamed of starting again with a new restaurant. We are thrilled to have the opportunity to welcome you to Ruby's.  We hope you'll love it as much as we do!
